Can the SHD route it's analog input to a network stream, so I can listen to vinyl in another room?

absolutely not !

The LAN port on the rear is only for the Volumio board.

You can digitize an analog stream and route it wirelessly using Logitech Media Server / squeezelite relatively easily. This link has some basic instructions ->  Integrate analogue audio devices into your multi-room system | HiFiBerry .

I use a Raspberry Pi 3 with a HifiBerry ADC+ Pro but you should be able to do this with any ADC (either USB or HAT) that works with a RPi3/4. SHD can also function as an ADC with USB output to a RPi but setup would be complicated by the fact that any processing on the SHD will be applied to digitized signal and you probably do not want x-overs / EQ / Dirac applied to your other room. Probably best just to get a separate ADC.

It's a nice setup because you can locate the turntable far away from your listening area and use multiple squeezelite endpoints to play the stream in different rooms.

I have not used the UMIK-1 on a RPi but the UMIK-1 is listed as being compatible with Linux and USB class compliant so I believe it should work.
