Was hoping to hook one of these up to my TV via TOSLINK - am I correct in understanding that the TV will always output at however many channels the source media has, and it's up to the DAC to downmix? Will the Flex downmix to my 2.0 setup if I connect it directly to the TV instead of putting an AVR between the two?

I'd suggest checking the manual for your TV. I'd be very surprised if it doesn't have an option to send a stereo downmix to its Toslink output. I've done with myself with different TVs and miniDSPs.
