Can the miniDSP/miniDIGI combo do 2x analog in to SPDIF out?

Sure, simply feed your signal to miniDSP ADC and configuring correctly the miniDIGI I2S routing. Looking at the datasheet of the plug-ins, you'll notice the entry Digital inputs/outputs: There are 2 options from there:
1) Taking the "Un-processed signal from ADC on I2S_Data_Out5/6". Just place the jumper to the correct pin on the miniDIGI (output section this time).
2) Taking the Plug-in OUT#1/2 available on I2S_Data_Out1/2 or Plug-in Out# 3/4 available on I2S_Data_Out3/4. Once again, just routing the I2S with the correct jumper on the miniDIGI.
