I want to use more than two sources. But when I try using a HDMI switch I can only get two channel sound. I have tried two different switches (both supports multichannel pcm) and several different sources, but whatever I do I only get two channels. Without switch it works flawless.

That's pretty weird... is the Channel Mode set to Auto? Perhaps try setting it to 7.1 and see if that makes a difference?

Could you post the name/model number of the switches?
I am not miniDSP support.

Indeed that's quite odd, not sure what could be the cause here.. We'd need more information to be able to help here.
