Most, if not all, products can invert polarity for individual audio signals.

More sophisticated products, capable of executing Finite Impulse Responses (FIR), are limited in altering phase only by the number of taps/coefficients available and the non MiniDSP software capable of generating the FIR, e.g. Rephase.

Wouldn't the time delays you can add to the output channels (for different length wires, etc) be considered something like a phase adjustment?

I'm not really sure what question is being asked here.

Exactly what I need. So specifically the 2x4 does just a 180deg shift

That's a polarity reversal, not a phase adjustment/shift.

Phase shifting capability is much move involved than simple polarity reversals.
The standard 2x4 unit can implement frequency-dependent phase shifts, and the 2x4HD unit can implement both frequency-dependent and frequency-independent (pure delay) phase shifts.

You seem to be looking for a simple answer, but what you're asking about is not simple.
I suggest to do some reading on the phase-shifting capabilities of IIR and FIR digital filters. The miniDSP units are powerful tools and can probably implement just about any sort of phase-manipulation you desire.
